Not shown is searing @ 500F + on the grill. Could’ve used more sear time or higher temp. Very happy with overall outcome.

    Did you sear before the bath? That is unconventional, but no shade. I’ve occasionally wondered how/if the sear flavours would distribute during the cook. I’ve got a couple striploins in the hot tub right now, once they’re done my typical move is to sear in a pan with avocado oil and butter added to help develop a crust.

    So I read a few places, fat in the bag creates steak flavored fat, not fat flavored steak. I think Guga did the experiment as well and confirmed it?

    Looks good! Next time leave the butter out of the bag. I made the same mistake at first. Save the butter for after the sear. The flavor of the steak will be way better! Butter in the bag makes it taste washed out in comparison.
